The menu is healthy and organic, and with its own name (that of the producer of the raw material). All dishes are elaborated with water from the spring itself, artisan salt flower, and extra virgin olive oil, and cooked in Pereruela clay over a live fire. The bread is also organic and made in a wood-fired oven by Tio Vargas, from Roelos.
